People with the highest intake of non-antioxidant preservatives had a 29 percent higher risk of developing hypertension and a 16 percent higher risk of cardiovascular disease, compared with those who consumed the least. Antioxidant preservatives told a related but distinct story. People with the highest intake of these compounds had a 22 percent higher risk of hypertension, although no significant link to overall cardiovascular disease was found for this category as a whole.

Eight Specific Additives Under Scrutiny

Nearly all participants, 99.5 percent, had consumed at least one food preservative within just the first two years of the study, underlining how widespread these substances are in the modern food supply. Among the 17 most commonly consumed preservatives, each eaten regularly by at least 10 percent of participants, eight were individually associated with a higher risk of hypertension:

  • Ascorbic acid

  • Sodium erythorbate

One compound stood out in particular: ascorbic acid, better known as a form of vitamin C when used as a nutrient, was also individually linked to a higher risk of cardiovascular disease when used as a food additive. This distinction matters, since ascorbic acid used as a preservative in industrial food processing is not the same context as vitamin C obtained from fruits, vegetables, or supplements taken for nutritional purposes.
