In baking, gluten provides elasticity, structure, and texture, making it essential for bread and many baked products. For most people, removing gluten without a diagnosis offers no proven health benefit and may even reduce diet quality by limiting nutritious whole grains.

The Gluten-Free Paradox
Ironically, some patients diagnosed with celiac disease gain excess weight after switching to a gluten-free diet. This phenomenon results from two factors. Researchers also observed changes in the expression of Claudin-2, a protein involved in regulating intestinal permeability. Although more human studies are needed, these observations highlight the importance of limiting unnecessary consumption of highly processed foods.

The greatest safety concern involves premature infants. Because xanthan gum has been linked to necrotizing enterocolitis, a severe condition involving intestinal tissue damage, regulatory authorities prohibit its use in formula intended for premature babies.
4. The Proven Benefits of Whole-Grain Wheat
For individuals without gluten-related disorders, scientific evidence consistently supports the health benefits of consuming whole grains, including whole-grain wheat. Rather than acting as a harmful food, whole grains contribute to disease prevention through multiple biological mechanisms.
Cardiovascular and Metabolic Protection
Large prospective cohort studies have found no evidence that gluten itself increases cardiovascular disease risk. Instead, consuming two to three daily servings of whole grains is consistently associated with lower risks of heart disease, stroke, and type 2 diabetes.
Avoiding gluten without medical necessity may reduce whole-grain intake and unintentionally remove these well-established protective effects, potentially increasing long-term cardiovascular risk.

Conversely, individuals diagnosed with celiac disease, non-celiac gluten sensitivity, wheat allergy, or dermatitis herpetiformis benefit substantially from carefully managed gluten avoidance. Even in these cases, nutritional quality remains essential, with naturally gluten-free whole grains generally representing healthier choices than highly processed gluten-free replacement foods.
Overall, the strongest evidence continues to support a balanced dietary pattern centered on minimally processed foods, abundant fruits and vegetables, legumes, and whole grains whenever medically appropriate. Before making major dietary changes or eliminating gluten, professional medical evaluation remains the safest approach to ensure that nutritional decisions match individual biological needs and long-term health goals.
